WHAT TO EAT IN ISLA AGUADA
Isla Aguada is surrounded by water, which is why it is famous for its exquisite food based on seafood.
The most iconic dishes in this little paradise use the giant shrimp and blue crabs as the main ingredient.
Among the typical dishes are pan de cazón (casserole dish in Mexican cuisine that is prepared in the style of lasagna using layered tortillas with dogfish fillets, black beans or refried black beans and spiced tomato sauce), mero tikin xic (fish is prepared whole then marinated with achiote and sour oranges then wrapped in a banana leaf and cooked in an earth oven), jaiba rellena (stuffed crabs) o jaiba al mojo de ajo (crabs with garlic sauce) and roasted fish, as well as its various ceviches (citrus-marinated seafood dish).
However, what Isla Aguada is famous for is its shrimp that are served in various ways in each of its restaurants.

“Chilpachole de Camarón” Recipe
Ingredients:
- 6 shrimp heads
- 8 clean jumbo shrimp
- 8 tomatoes
- 4 cloves of garlic
- 2 cloves
- 1 sprig of epazote, washed and disinfected
- 1 onion
- 2 serrano chiles
- 1 stick of cinnamon
- 2 pieces of dried chile de árbol
- fish soup
- 1 pinch of salt
- 1 pinch of ground black pepper
Directions:
Roast the tomatoes, onion, garlic, serrano chiles, cinnamon, cloves and shrimp heads on a griddle. Once roasted, put in the blender and process with a little of the fish broth, until all the ingredients are integrated.
Heat the oil in a pot and pour the previous mixture and fry for a minute.
Add the shrimp and cook for a couple of minutes. Put the epazote and the dried chile de árbol. Rectify the seasoning of salt and pepper. Boil over low heat for 15 more minutes.
Serve hot and with the sauce of your choice.
