WHAT TO EAT IN SAN FELIPE

This beautiful corner of Baja California offers an iconic gastronomy.

It is based on seafood, including chocolate clams, sole, snails, shrimp and manta rays, used as main ingredients in typical dishes like estofado de mantarraya (manta ray stew) or caldo de camarón con almejas (shrimp broth with clams).

However, this destination also offers delicious beef cuts and its traditional fish tacos, made from a mixture of fried fish strips, corn or flour tortillas and your favorite sauce, either green or pico de gallo and top with sour cream, mayo, lime, cilantro and sometimes sriracha.

Gastronomy and typical cuisine in San Felipe

Shrimp Broth with Clams Recipe

Ingredients:

  • 500 grams of shelled and clean shrimp
  • 500 grams of clean white clam
  • 1 tablespoon minced garlic
  • ½ onion finely chopped
  • 2 cups of natural tomato puree
  • 2 ancho chili peppers, seeded and soaked in hot water
  • 2 chipotle chiles
  • 2 cubes of seasoning with tomato
  • 1 ½ liters of water
  • 6 sprigs of disinfected epazote
  • 1 potato cooked and cut into cubes
  • ½ teaspoon ground black pepper
  • ½ teaspoon of salt with onion powder
  • 4 tablespoons of corn oil
  • 1 sprig of fresh coriander, disinfected and finely chopped
  • lemons cut in half

Directions:

Heat the oil in a pot and add the garlic and onion, cook until brown. Add the shrimp and cook for three minutes. Season with onion salt and pepper.

Blend the tomato puree with the chiles, the tomato seasoning with a little water. Strain and pour over the previous mixture. Add more water, the clams, the epazote and the potato. Cook until it boils.

It is served with finely chopped onion, cilantro and lemon.
