WHAT TO EAT IN ZAMORA

One of the typical dishes of Zamora are Zamorano-style potatoes.

This dish includes cooked potatoes accompanied with three types of sauce: black, oil, and cucumber with jalapeño.

“Chongos Zamoranos” Recipe

Ingredients:

  • 2 liters of whole milk
  • 1 stick of cinnamon
  • juice of two lemons
  • 1 cup of sugar
  • 2 tablespoons of grated piloncillo

Directions:

Warm the milk with the cinnamon, sugar and piloncillo, always avoiding the boiling point.

When it is lukewarm, gradually add the lemon juice and mix lightly.

Turn off the heat and let rest for 30 minutes.

During this time you will notice that the milk begins to release a whey that looks like water, that is part of the process.
