WHAT TO EAT IN METZTITLÁN

Metztitlán has the distinction of Pueblo con Sabor (Town with Flavor), so you are guaranteed to find good gastronomic options.

Try the delicious recaudo or fish tamales, tecocos (a corn dough gordita mixed with pork lard and salt filled with bean or pea paste), green xalita, pumpkin popsicles, esquites with pulque, and esquites with chicken.

Other dishes you will find in this Magic Town are corn husk tamales, Zacatamal, made with a special mole and filled with pork or chicken. 

You can also savor the typical Hidalgo barbacoa and follow the Pulque Route to meet the tlachiqueros and learn how this drink, with an alcohol content of about 4 to 6 degrees, is fermented and prepared.

If you like sweets, you should not miss baked fruits, which are similar to cookies made with lard, flour, butter, tequezquite, orange juice, and sprinkled with cinnamon and powdered sugar.

Tecocos Pintos Recipe Ingredients

Ingredients:

  • 1 cup of cooked pinto beans
  • 1 chopped tomato
  • 1 chopped onion
  • 1 chopped jalapeño pepper
  • 2 garlic cloves, minced
  • 1 tablespoon of olive oil
  • salt and pepper to taste

Directions:

Heat the olive oil in a large skillet over medium heat.

Add the onion, jalapeño pepper, and garlic. Cook until golden.

Add the tomato and cook for a few more minutes.

Incorporate the pinto beans and mix well. Remember to soak the pinto beans overnight before cooking to soften them and reduce cooking time.

Season with salt and pepper to taste.

Cook on low heat for 10 minutes, stirring occasionally.

Serve hot.

You can accompany Tecocos pintos with corn tortillas or white rice.

Add fresh chopped cilantro as a garnish to give it a touch of freshness.

The “telcos” are served accompanied by Ixelixca, which is cane juice water.
