WHAT TO EAT IN SANTA MARÍA DEL RÍO

Try its culinary delights such as the delicious barbacoa (slow-roast lamb) and the carnitas (braised or roasted pork dish).

Other dishes that you can savor are the wedding roast, made with pork meat bathed in red sauce, or the famous tamborcitos, which are similar to gorditas but smaller filled with beans, cheese and chiles.

In the Public Market you can enjoy these typical dishes and much more.

As in many other parts of San Luis Potosí, you can delight yourself with some delicious nopales in salads or as part of different stews.

If what you want is a dessert you may try camotes enmielados (sweet potatoes with honey), quesos de tuna (candied fruit of the pricklypear cactus), campechanas (sweet brushed pastry), milk candies, quince candies or muéganos.

“Queso de Tuna” (prickly pears desert) Recipe

Ingredients:

  • 1 kg of tuna cardona, (with this amount you will get 250 to 300 grams of prickly pear cactus)
  • vegetable oil

Directions:

Remove the shell from all the tunas.

Once peeled they must be crushed and strained to separate the juice or pulp from the seeds.

The pulp is boiled in a saucepan, preferably copper, since these cases cause the temperature to be distributed evenly.

While the pulp is boiling, moved until it thickens. Keep on moving because it is very easy to burn.

When the desired consistency is achieved, it is poured into an aluminum container greased with vegetable oil and allowed to cool.

Subsequently, the mixture must be kneaded on a flat surface.

Allowed to cool and the mixture acquires the consistency of a jelly. It can be filled with walnuts, pine nuts, peanuts or almonds.
