WHAT TO EAT IN ROSARITO
The typical dish of the region is the famous "Puerto Nuevo style lobster".
The inventive dishes in Rosarito are the clear example of Mexico’s evolution in authentic cuisine. It has more than 80 restaurants to satisfy any craving.
Among the ingredients used by these creative chefs are sea urchin, geoduck, abalone, and lamb, all of them combined with the exceptional wines of the region.
The typical dish of the region is the famous "Puerto Nuevo style lobster", each year almost a million lobsters are served and now it is a dish that has become internationally well-known. This dish consists of a fresh lobster caught right off the coast of Rosarito, fried and served with rice, beans, hot sauce and flour tortilla.

Puerto Nuevo Style Lobster Recipe
Ingredients:
- 1 red lobster cut in half, washed and cleaned
- 50 gr roasted tree chile
- 1 garlic clove
- 1 cup tomato puree
- 100 gr butter, melted
- 2 lemons
- salt to taste
- pepper to taste
Directions:
Remove intestinal tract and rinse in the water stream. Dried perfectly well. Cut the lobster lengthwise in half. Crack claws; remove claw meat. Place claw meat in body cavities.
Preheat broiler. Arrange the lobster halves, meat side up and brush lobster meat generously with some of melted butter.
Broil the lobster halves until meat is just opaque, it will take about 3 minutes. Arrange lobster halves on platter. Drizzle remaining butter over.
For the sauce, fry the chili and grind it with the tomato puree, garlic, salt and water. It is served accompanied by melted butter, split lemons, red sauce, rice and beans.
