WHAT TO EAT IN SAYULA

Its history and traditions are reflected in its gastronomy, which becomes an experience not to be missed. 

Typical dishes include tamales, pozole, enchiladas, birria, and tostadas de pata. You can also savor the traditional tortas ahogadas, filled with a pork stew and drenched in spicy sauce.

Another dish you must try is sopitos, small fried corn tortillas topped with shredded meat, onion, lettuce, and cheese, and drenched in hot sauce—they are delicious.

As for sweets, Sayula will not disappoint with delicious jericallas, traditional glorias, and especially exquisite cajeta, a sweet made from cow's milk, which is an important tradition in the region and even places Sayula as the best producer of this sweet in Mexico.

Cajeta is made in copper cauldrons, with milk from the region and vanilla, and must be cooked for hours. It needs to be stirred constantly to prevent the milk from sticking or burning. Finally, it is packaged in pine wood containers.

Also, you can't leave without trying the famous regional tequila and coffee liqueur.

Recipe for Tostadas de Pata (cow's feet)

Ingredients:

  • 2 cups of cooked and diced pig's feet or beef feet
  • ½ onion, sliced
  • 1 cup of cabbage, sliced
  • ½ cup of white vinegar
  • 1 cup of water
  • 2 tablespoons of oregano
  • 450 ml of cream
  • 400 grams of panela cheese
  • 1 cup of green sauce
  • 10 tostadas

Directions:

In a bowl, add the pig's foot, onion, cabbage, vinegar, water, oregano, and salt. Mix well and let it rest for 25 minutes.

Serve the pig's foot mixture on tostadas and accompany with cream, panela cheese, and green sauce.
