WHAT TO EAT IN CUETZALAN

The gastronomy of this area of the mountains combines indigenous and Spanish elements.

In addition to the fact that due to its climate and its generous land there is a great variety of fresh ingredients that are used to prepare delicious dishes.

In Cuetzalan you can taste the smoked cecina (cured meat) accompanied by mushrooms and the famous tlacoyos which are small molotes filled with a pea dough, covered with chiltepin sauce, cheese and onion.

Another of the dishes that you can savor in this Magical Town are: the pipián ranchero (chicken with chayote, ground sesame and chiltepin), sopa de guía de chayote the chayote (soup made of baby chayotes) or bean soup and the bean tamales. However, one of the most traditional is the chop prepare with pineapple, orange and honey.

Cuetzalan produce one of the most aromatic and recognized coffees in the country. Another drink that you cannot miss is the Xoco atol, a fermented corn atole.

“Pipián Ranchero” Recipe

Ingredients:

  • ½ chicken or sliced turkey breast or spare ribs
  • 200 grams of peeled seeds
  • 50 grams of grated chocolate
  • 2 tablespoons of butter or oil
  • 4 cloves of garlic
  • 6 green serrano chilies
  • 10 green tomatoes
  • salt to taste

Directions:

Cook the chicken pieces and reserve the broth.

Fry the chocolate and the chips in the butter or oil, until they form little balls.

Grind the garlic, cumin, chiles, tomatoes and salt with the broth.

Add the grind mixture to the balls and leave on a very low heat, until it thickens. Rectify the seasoning and strain.

Serve with the chicken pieces.
