WHAT TO EAT IN XILITLA

When you visit this town you must try the zacahuil, a Huasteca delight.

It is a huge tamale that can measure more than a meter. It is filled with a mixture of meats seasoned with a wide variety of chilies and herbs.

Other options include the caldo xóchitl, a delicious soup made with shredded chicken and pieces of avocado, cilantro, tomato, green pepper and onion, and of course the enchiladas potosinas, prepared by dipping the tortillas in a guajillo chile sauce filled with cheese, cream, and lettuce and frequently served with potatoes, chorizo, and carrots.

One of the products that have come to give personality to Xilitla is a high quality coffee, there are several brands produced by small family businesses.

Although it is not the only drink that you can enjoy, there are other good options like the atole with flavors such as corn and pineapple.

If you want something with a little alcohol you can try fruit wines, including vino de jobo, a small fruit that grows in the region, as well as other flavors such as orange and capulín

Xochitl Broth Recipe

Ingredients for the broth:

  • 1 kg of chicken
  • ¼ onion
  • 1 cup of cooked chickpeas
  • 2 cloves of garlic
  • 2 canned chipotle peppers
  • pepper to taste
  • salt to taste

Ingredients for the garnish:

  • 1 tomato cut into small cubes
  • ½ onion finely chopped
  • 1 avocado chopped
  • 3 lemons cut into quarters
  • tortillas cut into strips and browned

Directions:

Soak the chickpeas in water from one night before.

Cook the chickpeas in a pressure cooker for approximately 15 minutes.

In a saucepan add the chicken, onion and garlic and cook over low heat. Remove the foam that forms on the surface continuously. Season with salt and pepper. Remove the garlic and onion and cook until the chicken is done.

Shred the chicken and return it to the saucepan. Add the chipotle pepper and cook for 5 more minutes. Rectify the seasoning.

Serve very hot and garnish with tomato, onion, avocado, lemons and fried tortillas.
