WHAT TO EAT IN RIBERA DE CHAPALA
Located on the banks of a large lagoon, its dishes are closely related to a fish that abounds in this body of water, the charal.
When you visit Chapala you must try its rich golden charales with salt, chili and breading, it's a delicious snack. However, you can also eat them in tamales, omelettes, tortitas with mole and nopales, and in many other ways. It is the most typical ingredient of this destination.
All the restaurants located along the shore of the lake offer various options to savor the fresh charales, an important source of protein.
Other dishes that you can savor are: caldo dulce (freshwater fish broth), caldo michi (soup made with squash, onions, tomatoes, cabbage and catfish), pescado blanco al mojo de ajo (white fish fillet in garlic sauce) or tacos de hueva (fish eggs tacos) and of course some of the specialties of the state of Jalisco such as the famous birria (stew made with goat meat).

“Tortitas de Charales” Recipe
Ingredients:
- 150 grams of charal (little fish that live in major lakes)
- 4 eggs
- vegetable oil
- 2 epazote leaves
Directions:
Remove the heads of the charales before cleaning them, then rinsed the fish very well until the excess salt is removed.
Once they are clean, dry and fry until golden.
Beat the eggs and add the charales to the mixture and add the epazote. It is not necessary to put salt, since the charales already provide enough flavor.
Take portions of the mixture and form pancakes. Fry them and place them on absorbent paper to remove excess fat.
They can be served with red or green sauce.
