WHAT TO EAT IN OTUMBA

In Otumba, various ingredients are produced, such as beef, pork, lamb, and chicken, as well as nopales, prickly pears, lettuces, corn, and quintoniles, among others.

These products are used to prepare traditional dishes such as barbacoa, lamb mixiotes, snail mixiotes, grilled quail, mole, tlacoyos, and quesadillas with squash blossoms, mushrooms, and barbacoa.

In season, you can also enjoy maguey worms, ostrich meat, chinicuiles, escamoles, and snails.

This land still preserves the craft of the tlachiqueros, the guardians of the magueyes, who know how to scrape the plant's piñas to obtain aguamiel, from which pulque, Otumba's traditional drink, is made.

Recipe for Quintoniles Tacos

Ingredients:

  • 1 onion
  • 2 serrano chiles
  • 1 coriander bouquet
  • 2 cloves of garlic
  • 200 gr of jocoque
  • 500 gr of quintoniles
  • salt to taste
  • oil the necessary
  • tortillas

Directions:

Fry the chopped onion in a pan with oil until transparent.

Add the finely chopped garlic and chiles and sauté for 2 minutes.

Add the cleaned quintoniles and cook for 2 minutes.

Incorporate the jocoque, season with salt; when they start to release liquid, cover the pan and turn off the heat.

Drain the liquid, add the chopped cilantro, and set aside.

Heat corn tortillas on both sides, fill with the greens, form the tacos, and serve hot.
