WHAT TO EAT IN CELAYA
The gastronomy in Celaya is one of its attractions since it has a great variety of typical dishes.
Among the most iconic dishes are: the gorditas de tierras negras, which are made with cornmeal and are stuffed with remains of pork carnitas, or good cheese with guajillo chile.
Other must-try dishes in Celaya are: barbecue, chicharrón duritos (a kind of toast) with cueritos (pork rind), pacharelas which are large tacos filled with ranchero pork rinds, cottage cheese or beans and of course their famous tacos with rich stews.
However, what has made Celaya famous are its sweets, especially the cajeta that comes in various options such as burnt, vanilla, walnut, raisin, pine nut or almond cajeta. There are also other sweets that combine the rich cajeta, such as obleas (wafers), chiclosos (taffy) or paletas (lollipop).

“Cajeta” Recipe
Ingredients:
- 1 liter of goat's milk
- 300 grams of brown sugar
- 5 ml of vanilla essence
- ¼ teaspoon baking soda
Directions:
Mix all the ingredients in a wide-bottomed, tall pot over medium heat, stirring constantly with a wooden spoon.
As it thickens, the intensity of the heat is lowered until the mixture is cooked but without bubbling too much.
It is kept on the fire for approximately two hours, stirring constantly until it acquires a consistency similar to condensed milk. It is known that it is ready when, when stirring with the spoon, it leaves a spiral trace on the surface of the sweet.
Let cool and store in an airtight container.
