WHAT TO EAT IN REAL DEL MONTE
Real del Monte has a gastronomic tradition that has a clear British influence due to mining activity.
Of course, a visit to Real del Monte would not be complete without trying a pastry made in brick ovens. This is a common dish from the southwest of England and was brought to Mexico by Cornish people who worked in the mines. The pastes are filled with potato, leek or parsley, ground beef and black pepper.
Another must try dishes in this Magical Town are the enchiladas mineras a rolled corn tortilla filled with cheese, onions, and a stew-like mix of potatoes and carrots. If you like meat you can ask to add roast meat, egg or chorizo.
You can enjoy the pan de pulque (bread with pulque, an alcoholic beverage made from the fermented sap of the agave plant), pan de nata (cream bread), cocoles (made with wheat flour, milk, eggs, and some localingredients) and sweet tamales.
Be sure to accompany your meal with the classic curado, prepared with pulque and fruit, to which a sweetener such as honey or sugar.

Pulque Bread Recipe
Ingredients:
- ½ cup of pulque
- 7 eggs, separate yolks and whites
- 250 grams of sugar
- ½ kg of flour sifted three times
- 325 grams of butter
- 150 grams of fresh walnut
- 1 teaspoon of yeast
Directions:
Beat the egg whites together with the pulque for approximately 10 minutes.
Gradually add the other ingredients. When you have all the mixture pour into a previously greased bread mold.
Put in the oven at 220ºC for 25 to 30 minutes.
Serve it when it's cold.
