WHAT TO EAT IN NUEVO LAREDO

Like most destinations in the north of the country, in Nuevo Laredo two ingredients are important flour and beef.

However, you can also savor a delicious machaca (dried meat), a cabrito (roasted goat kid) and some pork stews.

The perfect companion for all these stews are frijoles borrachos (beans cooked in a sauce made with beer).

The city lies on the banks of the Rio Grande, across from Laredo, that is why some of the typical dishes incorporates fish, such as: chicharrones de catán, made with the catan, a very common fish in the region, cut into pieces and covered with flour and fried in oil.

Frijoles Borrachos (cooked beans) Recipe

Ingredients:

  • 6 slices of bacon, cut into small pieces
  • 3 tomatoes finely chopped
  • ½ onion finely chopped
  • 2 serrano chiles finely chopped
  • 1 clove of garlic
  • 6 cups of cooked beans, they can be Peruvian, black, pinto or bayo
  • 1½ cups of light beer
  • 2 tablespoons finely chopped fresh coriander

Directions:

In a skillet cook the bacon until it is golden Brown and become nice and crispy.

Add the tomatoes, onion, chiles, and garlic and cook for one minute. Add the rest of the ingredients, the beans, the bean broth, the beer and the cilantro and season with salt.

As it begins to boil, reduce to a simmer and continue cooking. Stir occasionally for about 15 minutes. If you’d like the beans a little more tender, simmer them a little longer until they’re perfectly thick. You may need to add a splash of water or chicken stock if it needs a little more liquid.

When you’re ready to serve them, mix in some freshly chopped cilantro along with the crispy browned bacon.

Serve with toast or warm tortillas.
