WHAT TO EAT IN CIUDAD JUÁREZ

Without a doubt, being a big city you can find a great gastronomic offer with a huge variety of possibilities.

However, the typical dishes from the region are carne seca (dry meat), Chile Chilaca, Asadero Cheese, Chile with Asadero, Las Gorditas, caldo de oso (bear broth, soup made from fish broth) and the delicious beef cuts of Chihuahua. All this accompanied with the delicious flour tortillas.

The Burritos are the unmissable in Ciudad Juárez, combining the flour tortillas with roasted meat, barbecue or any other type of stew.

You can also savor a rich pinole made with corn flour or chia, either in a drink or as sweet pancakes, when combined with piloncillo, cinnamon and fruit.

As for the drinks, you must try the Sotol that has up to 45 degrees of alcohol and is processed from the Dasylirion, desert leaf succulent shrub. Tarahumaras have used it over the years as a ceremonial drink.

There is a great variety of options from casual restaurants, fondas or elegant establishments. In recent years, Ciudad Juárez has gained fame for the fascinating places and unique cuisine, because there are creative young chefs are constantly experimenting with new ingredients and techniques to create unique and innovative dishes, known as "fusion cooking".

Pinole Recipe

Ingredients:

  • 1 cup corn meal
  • 2 tablespoons brown cane sugar or organic honey
  • 1 teaspoon cinnamon powder, 1/3 cup chia seed, ¼ cup flaxseed and ¼ cup almonds optional

Directions:

Heat a cast iron pan over moderate heat, do not add oil, then tip in your cup of cornmeal and stir at intervals to make sure it all toasts reasonably evenly and doesn’t catch on the bottom. Keep on moving for 10 minutes or so until is starts changing from white to a soft golden color.

Add the sugar, powdered cinnamon and chia seed, then mix through the warm cornmeal while still on the heat, then once nicely toasted through remove from heat.

If using honey mix only the corn, chia seed and cinnamon and add the honey when you are ready to eat the pinole or use it in a recipe.

Allow the pinole to cool right through before storing in an airtight container.

You can add other ingredients such as anise, chia seeds, lemon shell or orange, chocolate, ginger or fat pepper.

You can use it to prepare a dessert or drinks, whether refreshing or hot, as well as in the preparation of sweets and cookies.
