WHAT TO EAT IN REAL DE ASIENTOS

The local cuisine is also one of the attractions of this Magical Town with Chichimeca origins.

Typical dishes include: asado de novia (fatty pork shoulder chunks that simmer in a red chile and chocolate sauce until tender), gallina a los nueve vinos (chicken cooked in nine wines), quesadillas de birria (stew served with its braising liquid), memelas de chile (slightly thick corn tortilla topped with different fresh ingredients) and gorditas in various flavors, with the huitlacoche filling being particularly noteworthy.

Perhaps the most representative dish of Real de Asientos is the "conejo a la Chichimeca" (Chichimeca-style rabbit), prepared with chili and spices.

When it comes to sweets, you can't miss the opportunity to try the “dulces de leche”, sweets made with milk.

“Conejo a la Chichimeca” Recipe

Ingredients for 4 servings:

  • 1 rabbit of 1 ½ kilos
  • ½ kg of tomato
  • ½ kg of onion
  • 4 cloves of garlic
  • serrano chile to taste
  • pepper
  • cumin

Directions:

Cook the rabbit for approximately 20 minutes with garlic, onion and salt.

Drain and put oil in a saucepan to brown it.

For the sauce. In another pan, put sliced onion, chopped chili, garlic, pepper and crushed cumin, until soft, add the tomato.

Add the rabbit to the sauce and let it boil for 15 minutes.

Serve and accompany by nopalitos and beans.
