WHAT TO EAT IN ZACAPOAXTLA

In addition to the typical dishes found throughout the state of Puebla, in Zacapoaxtla you can enjoy delicious tlacoyos stuffed with alberjón, the town's distinctive dish.

You can find them, in the stalls of the municipal market and in restaurants.

The alverjón is a ripe, dry, yellow pea that is used throughout the state as a substitute for beans.

Other dishes that you can enjoy in Zacapoaxtla are: chile con huevo (eggs with chile), molotes (deep-fried, oval-shaped corn tortillas filled with various ingredients), squash flower quesadillas, smoked chicken or pork loin, and pan de huevo (small, brioche like golden breads covered with powdered sugar), among others.

As for sweets, you can taste dried fruits, macarrones (made with sugar and sweet milk), quinces, cocadas (shredded coconut, sugar, and egg yolks) and pepitorias (wafers of many colors like rainbows with pipe seeds).

Their herbal and fruit based liquors are something you should not miss.

“Tlayoyos de Alberjón” Recipe

Ingredients for the tlacoyos:

  • 500 grams of corn dough
  • 300 grams of peas
  • radishes
  • onion
  • fresh coriander
  • fresh grated cheese
  • cream

Ingredients for the sauce:

  • green tomatoes
  • 4 green chiles

Directions:

Once the dough is ready, take a small portion and form a cylinder and crush the ends first and then the entire piece.

Filled with crushed and previously fried peas and the tortilla is closed as if it were an empanada.

Fry in oil until the dough is cooked.

Can be accompanied with red or green sauce, cheese, chicharrón and cream
