WHAT TO EAT IN GENERAL ZARAGOZA

The gastronomy of General Zaragoza reflects the rich culinary tradition of the region.

One of the most emblematic dishes is "cabrito," a typical dish of Nuevo Leon. 

Cabrito is cooked in the oven or slowly roasted, resulting in tender and juicy meat that is served with flour tortillas, tomato sauce, and side dishes such as cowboy beans and rice.

Another traditional dish that can be enjoyed in General Zaragoza is "machacado con huevo." It consists of shredded and seasoned beef, cooked with eggs and accompanied by hot tortillas. 

Delicious flour gorditas are also highlighted, which are thick tortillas filled with various fillings such as minced meat, pork rinds, refried beans, or cheese.

Recipe for "Machacado con Huevo" (Shredded Dried Beef with Eggs)

Ingredients:

  • 1 tomato, chopped
  • ¼ onion, chopped
  • 2 or 3 serrano chiles, chopped
  • 1 tablespoon of oil
  • 100 grams (about 3.5 oz) shredded dried beef
  • 1 can (355 milliliters) of beer
  • 6 eggs, lightly beaten
  • Salt, to taste

Directions:

Heat the oil in a pan over medium heat and sauté the onion, tomato, and serrano chiles until they change color.

Add the shredded dried beef and stir until well incorporated. Pour in the beer and let it evaporate.

Beat the eggs, season with salt, and add them to the pan with the nearly dry beef mixture. Reduce the heat and cook, stirring constantly, until the eggs are set.

Serve this dish with refried beans and warm flour tortillas.
