WHAT TO EAT IN IZAMAL

Another attraction of this Magical Town is the gastronomy.

Here you can enjoy all the delicious dishes of the Yucatecan cuisine.

Among the most iconic dishes are: salbutes, panuchos, papadzules, chocolomo, stuffed cheese and lime soup, among many others.

However, the dish that characterizes Izamal is the frijol con puerco, made with pork loin, leg, and rib, accompanied with tomato sauce, radish, onion, coriander, avocado, habanero pepper, and rich tortillas.

You can also try the liquor known as “Agua de Vida” produced from the henequen plant with a taste similar to tequila.

If you want to experience the real Izamal and the taste of local life and what everyday people in the city get up to you can visit the municipal market. Sometimes on the weekends, there is live music in the chicken/pork/beef area.

“Frijol con Puerco” (beans and pork) Recipe

Ingredients:

  • 1 kg of black beans, rinsed and drained
  • 2 kg of pork loin or ribs cut into 5 cm pieces (can also be done with a combination of these two pieces of the pig)
  • 1 white onion cut in half
  • 4 branches of epazote
  • 8 radishes, julienned
  • 1 cup of chopped cilantro
  • 1 avocado cut into cubes
  • 4 lemons cut in four
  • 1 tablespoon salt
  • habanero peppers to taste
  • tomato sauce or chiltomate

Directions:

Put the black beans in a large pot with 6 liters of water. Bring to a boil over medium heat and cook for 45 minutes.

Add the pork, onion, epazote and salt. Stir well and cook for another hour and a half, with the pot partially covered, until the pork is cooked and tender. Make sure the broth doesn't dry out, so you'll need to be adding water after you add the pork (about 4 additional cups). Rectify the seasoning.

Serve the beans with pork accompanied by the radishes, cilantro, avocado, lemons, chiltomate sauce and habanero peppers.

It is accompanied with tortillas.
