WHAT TO EAT IN ZIMAPÁN

The gastronomy Zimapán will surprise you.

Here you can savor a delicious barbacoa, chicharrón and of course salsa de chile rayado made in a molcajete.

Other dishes that you can savor are the delicious chalupas and enchiladas often accompanied with dry roasted cecina.

Being in Hidalgo, you must try the traditional pastes with a variety of fillings including potatoes and ground beef, apples, pineapple, sweetened rice, or other typical Mexican ingredients such as tinga or mole.

Additionally, you can try the sweet tamales stuffed with jam of different flavors.

Among the traditional drinks the fruit liquors and the traditional pulque are very good options.

“Tamales Dulces con Mermelada” Recipe

Ingredients:

  • ½ kg of cornmeal for tamales
  • 125 grams of lard
  • ½ cup of refined sugar
  • 1 teaspoon of baking powder
  • 1½ cup of strawberry jam
  • ¼ cup raisins
  • 1 envelope of red vegetable paint
  • ½ cup of water
  • 10 dry corn husks

Directions:

Soak the corn husks in warm water for about 10 minutes to make them pliable, preventing tears or breaks and allowing them to fold the tamale.

Beat the lard in a deep bowl and add the ground corn dough.

Add the refined sugar and the baking powder and finally the water, that can be replaced by some mild-flavored fruit juice.

Beat all the ingredients until you have a homogeneous mass. One way to test the dough is to put a drop of the dough in a cup of water, and if it floats, the dough is ready and the tamales are spongy.

Incorporate the coloring and mix to paint the dough.

To assemble the tamales take a portion of the dough with a spoon and spread it on the corn husk, fold the ends inwards and the top downwards to give it a tamale shape.

Add a tablespoon of strawberry jam and raisins to taste.

Close the tamale by folding the lateral ends of the leaf towards the center and folding the top part of the leaf towards the back.

Once the tamales are made, they are put in a steamer for 35 minutes.

Serve with a chocolate or a champurrado.
