“Enmielados de Tecojote” Recipe
Ingredients:
- 500 grams of tecojote ( a fruit with the size of cherry tomatoes, a thin bright yellow skin and sweet and sour taste)
- 1½ cups of sugar
- 1 cinnamon stick
- 1 tablespoon of vanilla essence
- 1 liter of water
Directions:
Wash the tejocotes very well. Add water in a pot. Once the water is boiling, add the tejocotes and let them boil for three minutes.
After three minutes, put the tejocotes in a container with cold water, this will make the skin of the tejocotes wrinkle and you will be able to peel them more easily.
Boil 1 liter of water in another pot and add the sugar, the cinnamon stick and the tablespoon of vanilla and finaly the previously peeled tejocotes. Cook over medium heat for 40 minutes.
Stir constantly so that the sweet tejocote does not burn.
Once they are cooked, let cool and rest the preparation for at least two hours so that the flavors settle.
You can substitute the sugar for piloncillo and this will give it a different color and flavor.
