WHAT TO EAT IN AMEALCO DE BONFIL

Culinary traditions are also important in Amealco.

Here you can savor a tasty mutton barbecue, either in the market or in any of the local houses on Sundays. Other typical dishes are pork carnitas, beef rinds and quelites, either in tacos or quesadillas. You cannot miss the Tuesdays of Mole, a day when varieties of this delicious dish are prepared in all the local restaurants.

Other typical dishes are gorditas and enchiladas, pork carnitas and the famous tostadas de arriero also known as broken corn tostadas that are prepared with lime, salt and corn. Tostadas are eaten with nopales, meat, cheese and spicy sauce.

Among the desserts, the most common in the town are crystallized sweets.

The typical drinks are pulque, atole de agua miel de maguey (maguey honey atole) and "Sendecho", a drink that is produced in Santiago Mexquititlán with corn, cascabellillo peppers and alcohol, which is fermented for three or four days.

Quesadillas with Quelites Recipe

Ingredients:

  • 1 tablespoon of seasoning
  • ½ sliced onion
  • 2 garlic cloves finely chopped
  • 400 grams of quelites
  • 2 poblano chiles
  • 8 teaspoons of cottage cheese
  • 2 chopped tomatoes
  • 8 corn tortillas
  • 2 tablespoons of vegetable oil

Directions:

Sauté the onion in a pan together with the garlic for two minutes, add the quelites, the epazote and the seasoning.

For the sauce, sauté the onion, garlic and tomato and add the seasoning. Let cook until the tomato is tender.

Heat the tortillas and spread a teaspoon of cottage cheese. Add the quelites mixture and place a slice of the chile in each quesadilla.
