WHAT TO EAT IN SALAMANCA

In the gastronomy of Salamanca the main ingredient is the nopal (prickly pear cactus).

One of the most representative dishes is pencas rellenas, made with nopales, meat, cheese and chorizo, and of course the nopal tortillas.

Another typical dish of Salamanca is fiambre (cold cuts), as in some other cities of Guanajuato, is made with beef, chicken and pork combined with different vegetables and bathed in a rich vinaigrette.

However, the most distinctive dish of this city are the enchiladas with cecina, a salty-tasting beef that is prepared roasted.

In Salamanca you must try the famous nieve de pasta (made in a copper saucepan combining milk, sugar, vanilla and honey), and the pitahaya and tuna sorbets.

If you have a sweet tooth, you can also eat the cupcakes made with puff pastry and cooked in a clay oven with a unique flavor.

Receta de Nieve de Pasta

Ingredients for 2 servings:

  • 1 liter of milk
  • 1 ¾ cups of sugar
  • ½ teaspoon baking soda
  • 1 stick of cinnamon or 1 tablespoon of vanilla
  • ½ cup of peeled and ground almonds
  • ¼ cup natural flavor corn syrup

Directions:

Boil the milk with the vanilla or with the cinnamon and bicarbonate of soda in a three-liter container. Let it boil for 15 minutes.

Add the sugar and corn syrup. You have to stir well and boil over low heat until it turns to the point of caramel, that is, when you move you begin to see the bottom of the container.

Remove from the stove and add the almonds. Mix well and let it cool.

When the mixture is totally cold, it goes into the freezer.

It can be decorated with chopped almonds.
