WHAT TO EAT IN AGUASCALIENTES
Its gastronomy is based on meats, and even though is the smallest state in Mexico, it offers a wide variety of dishes.
Among the most typical dishes are: “menudo” (a soup cobbled together with beef tripe, hominy, garlic, onions, lime and dried chilies), the “pozole”(a spicy soup made from hominy, with meat (typically pork), and can be seasoned and garnished with shredded lettuce, chile peppers, onion, garlic, radishes, avocado, salsa or limes) and “birria” (spicy stew, traditionally made from goat meat or mutton).
Perhaps one of the most representative dishe of Aguascalientes is the famous chicken of San Marcos, and you can try it during the three weeks of the San Marcos National Fair. It consists of sliced chicken or beef prepared with a tomato sauce and accompanied by serrano chili peppers, other spices and fruits. Also typical of their cuisine are the stuffed gorditas (pastry made with masa), the baked pork, the Chile from Aguascalientes and the Peasant Soup.
During your visit to this state, you can also try other dishes such as puchero (stew containing beef, sausage, bacon, and various vegetables), salsa ranchera (a sauce that will make you salivate every time you think about it), Aguascalientes-style mole, chicken in enchilada sauce, baked goat, nopales with beans, pork toast in vinegar, taquitos golden, the famous red enchiladas, ranch meat pork, loin in chile sauce and a wide variety of dishes that you can enjoy in the famous “cenadurias” or “merenderos” of the city.
The variety of international gastronomic options ranges from oriental to Spanish, Italian, French, among others, in a wide range of restaurants for all tastes and budgets.
You'll find two main typical candies in Aguascalientes you can try crystallized fruits, sweets made with piloncillo, the “charamuscas”, the “charrascas”, the “jamoncillos” made with dulce de leche (a sweetened milk sauce), “cajeta” (thickened syrup usually made of sweetened caramelised goat's milk), the gorditas; as well quince cheese, a sweet, thick jelly made of the pulp of the quince fruit.
One of the best known typical candy is the guava candy, since Calvillo a town near the capital of Aguascalientes, is an important producer, you can also tray some other guava-based dishes and sauces, and even the leaves in a tea, used to alleviate rheumatism, swelling and indigestion.
Aguascalientes, is the second territory of Mexico in which the vine was planted. The boom in wine production occurred in the 1950s. By the quality of its grapes, the State offers excellent world-famous wines, brandies, spirits, and other flavored liquors. You can also try the “aguamiel” (sap of the Mexican maguey plant) and the “pulque” (a milk-colored, somewhat viscous liquid that produces a light foam).

“Chile Aguascalientes” Recipe
Ingredients:
- dry red ancho chili
- ground pork
- ground beef
- onion
- garlic
- raisins
- guava
- walnuts
- biznaga (barrel cactus)
- salt to taste
- chicken seasoning
- ground black pepper
- bolillo (a type of savory bread)
- natural cream
Directions:
Soaked the chiles in water with sugar deveined, drained and set aside.
Fried the onion and the pork and beef meet moving all the time.
Previously you have chopped the biznaga, the walnut and the guava without seeds, this mixture is added to the meat.
Season with salt and ground black pepper.
A “bolillo” is soaked in milk and it is also added to the preparation. Let it cool and fill the peppers with the mixture.
In a blender, blend together the walnuts, the milk and the cream. This sauce is added to the chiles at the time of serving them.
