WHAT TO EAT IN MEXCALTITÁN

Mexcaltitán is well recognized for its wide variety of exquisite dishes prepared with fresh fish and shellfish.

Specifically, the shrimp are collected by the locals with a kind of blanket interwoven with yarn called "barcina", it is always interesting to observe this process.

Among the regional dishes are: albóndigas de camarón barbón (shrimp meatballs), shrimp in mole, shrimp pâté, oysters in their shell, shrimp tamales, grilled mullet and the legendary taxtihilli (made from shrimp, corn and spices), all prepared with pre-Hispanic recipes.

One of the most typical dishes is jugo de camarón (shrimp juice), a delicious broth with a unique flavor.

Gastronomy and typical cuisine in Mexcaltitán

“Jugo de Camarón” (shrimp stock) Recipe

Ingredients for 10 servings:

  • 500 grams of fresh shrimp, well washed
  • 2 liters of fish broth
  • 4 potatoes
  • 4 carrots
  • 1 white onion
  • 1 clove of garlic
  • 4 jalapeño peppers
  • salt to taste

Directions:

First you have to peel and clean the shrimp, removing the head and the typical black vein.

Grind the shrimp with half a cup of water to make a puree.

Wash, peel and chop the vegetables into squares.

In a large pot, bring the fish broth and shrimp puree to a boil for 5 minutes.

Add the chopped vegetables and cook for another 15 minutes or until the vegetables are soft.

Season to taste and let it rest for 10 minutes.

Serve it in a glass and add a slice of deveined and seedless chile.
