WHAT TO EAT IN SAN MIGUEL DE ALLENDE
In this beautiful town you can enjoy delicious cuisine.
Ranging from the appetizers found in street stalls and the market, to the more sophisticated international cuisine offered by its prominent restaurants and boutique hotels.
Among its typical dishes are: “patitas de puerco” (pork trots), stew that includes poblano chilew and onions; “rabo de zorra”, chiles anchos stuffed with eggs; taquitos Silao style, stuffed with chorizo, avocado, chipotle chile along with tomato sauce.
You can also try: tamales guanajuatenses, stuffed with pork meat, herbs and chiles anchos; “pacholas guanajuatenses”, are like meat tortillas prepared with ground meat; “empanadas de carnitas”, baked or fried pasty filled with meat; “pan de acámbaro”; and, of course, the “fiambre” San Miguel de Allende style, a mixture of different types of beef, chicken and pork with fruits and vegetable in vinegar.
Among its typical desserts are: the “charamuscas” charamuscas (melted, twisted brown or white sugar, usually with peanuts or coconu), strawberries with cream from Irapuato, “cajeta” (sweetened caramelized milk) from Celaya, cajeta jelly, jamoncillos (caramels), “pepitorias” (pumpkin seeds with molasses), alegrías (sweet made from amaranth seeds toasted until they pop), cocadas (coconut, egg, and sugar) and “tumbagones”, a tube shaped cake made of green tomatoes and sprinkled with sugar.
As for the traditional drinks of the state of Guanajuato, we can mention: “colonche”, a drink obtained by fermenting the juice of red tunas, the fruits of the nopal cactus, its flavor is sweet and gaseous and its alcohol content is very low.
Gastronomy and typical cuisine in San Miguel de Allende
“Fiambre” San Miguel style Recipe
Ingredients for 8 servings:
- chicken chopped into pieces
- 1 cooked beef tongue
- 3 pork trots
- 1 orejona lettuce
- 4 large apples
- 4 seedless oranges
- 4 limes
- 2 bananas
- 6 guavas
- 2 medium Jícamas
- 2 large beets
- 1 olive jar
- 1 cup peeled peanuts
- 1 large avocado
- 1 lt. olive oil
- 1 lt. apple vinager
- salt to taste
- pepper to taste
Directions:
To make the vinaigrette, mix olive oil, apple cider vinegar and add salt and pepper.
Cooked the beef tongue and the pork trots, sliced and add both in the vinaigrette.
Cut into slices the unpeeled apples, oranges, limes and guavas. Peel the bananas, jicamas and beets and cut into slices too.
Add all these ingredients to the vinaigrette.
Marinate for at least an hour.
Serve the different meet over a bed of lettuce and add the fruit and vegetables. At the end add the olives and peanuts and garnish with the avocado in strips.
