WHAT TO EAT IN HUICHAPAN

When you travel to Huichapan you must try the famous carnitas.

You also can enjoy the barbacoa de carnero, res y pollo (mutton, beef and chicken barbecue), the chicken or pork mixiotes and especially its traditional cheese.

You can also taste some delicious tlacoyos, the tecotitos made with nixtamal, lard and ingredients such as chicken, pipián, potato and peppermint can be added. They are wrapped in corn leaves and heated on the griddle.

As in all the towns in the state of Hidalgo, it offers more exotic dishes that include chinicueles, which are small red worms that are prepared fried or in sauce; or, the escamoles that are ant eggs or larvae that are included in tamales, soups, eggs or stews.

It also has typical drinks such as the carnavalito, a convination of orange juice, tequila and cinnamon and mamey pulque.

“Chinicuil” Sauce Recipe

Ingredients:

  • 30 chinicuiles ( larvae that attach to maguey roots in the rainy season)
  • 15 green tomatoes
  • 7 serrano chiles
  • 1 clove of garlic
  • salt to taste

Directions:

Put the chinicuiles to cook on the griddle until they are well toasted.

Wash the tomatoes and chiles. Put them to cook on the griddle.

Put the garlic, tomatoes, chiles and chinicuiles in a molcajete to grind all the ingredients.

Add salt to taste.
