WHAT TO EAT IN TALPA DE ALLENDE

Here you can try some dishes of the culinary art of Jalisco such as birria (flavorful stew served with its braising liquid), pozole (a rich, brothy soup made with pork, hominy, and red chiles), chicken tostadas and gorditas.

Talpa is a place where you can taste excellent guavas and various sweets made with this fruit such as rolls, cueros, jellies and dried apricots. There is even a Guava Fair that takes place in the third week of November.

One of the hallmarks of Talpa is the rompope, this nutritious drink is offered in various flavors such as mango, walnut, almond, coffee, coconut, pine nut and of course guava. In this Magical Town it is served with cinnamon and very hot.

Rollo de Guayaba (guava roll) Recipe

Ingredients:

  • 12 medium guavas
  • 2 cups of sugar
  • 1 lemon
  • ½ cup of cajeta (thick caramel sauce made with goat's milk)
  • ½ cup of chopped walnuts

Directions:

Boil the guavas in 2 cups of water over low heat for approximately 45 minutes. Remove the guavas from the water and let them cool for 15 minutes and blend them to get a smooth paste.

Strain the pasta through a fine mesh strainer to remove the seeds.

Add the sugar and lemon juice to the pulp, mixing everything very well.

Put it in a pot over low heat for an additional 40 minutes or until it looks transparent, stirring constantly.

Cover a tray with waxed paper and sprinkle sugar on top. Then add the freshly cooked mixture of guava pulp.

Let the mixture rest overnight, perfectly covered. The next day, spread the surface with cajeta and sprinkle chopped walnuts.

Roll up the preparation and serve.
