WHAT TO EAT IN ACULCO
Among the specialties of Aculco are the escamoles (edible larvae and pupae of ants).
The “escamoles” are known in Aculco as "Guijes" and are prepared with original recipes. Another typical dish you shoud taste is the mutton barbecues that are prepared in the traditional way in a hole oven with maguey stalks, as well as the carnitas and the turkey with mole.
Many of the typical dishes can be savored in the municipal market.
However, this town is famous for its rich dairy products such as cheeses, creams and butter. There is a wide variety of artisan cheeses such as smoked Oaxaca, Ranchero, Panela and Manchego with chipotle, epazote, walnut, blueberry or pinion, among many others.
You can also delight yourself with delicious sweets such as jamoncillos (a soft and rich milk fudge) and dulces de leche (a sweet of milk that is a thick, creamy, caramel-like sweet). Another tip is to try a delicious cheese pie.

Cheesecake recipe
Ingredients for the paste:
- 1 ½ cups of wheat flour
- 1 stick of butter of 90 grams
- 1 teaspoon of royal
- 5 tablespoons of cold milk
- ½ teaspoon of salt
- 1 glass of cold water
Ingredients for the stuffing:
- ¼ double cream cheese
- 4 eggs
- 1 can of condensed milk
- 1 lemon
Directions:
Sift the flour and add all the paste ingredients to stir everything with your fingers, without beating until you can form a ball.
Wrap the dough in a napkin and let rest for 30 minutes.
Roll out with a rolling pin to line the previously greased pie pan, ensuring that the dough is one centimeter thick.
For the filling, grind the cheese, milk, four egg yolks and lemon juice in a blender.
The egg whites are beaten to the point of nougat and added to the blender mixture. Putt he mixture in the pie mold and bake at 120ºC for an hour and a half.
Test with a toothpick that the filling is cooked and let it cool.
