WHAT TO EAT IN GENERAL TERÁN

Recipe for Baked Trout

Ingredients:

  • 4 leaves of hoja santa
  • 4 trout, scaled, finned, and gutted
  • 1 orange, sliced
  • 1 yellow lemon, sliced
  • 1 lime, sliced
  • 1 red onion, sliced
  • ¼ cup olive oil, plus extra as needed
  • salt and pepper to taste

Directions:

Preheat a grill to medium temperature.

Cut 8 rectangles of aluminum foil, each 30 x 15 centimeters.

On one rectangle of aluminum foil, place 1 hoja santa leaf, 1 trout, 1 slice of orange, 1 slice of yellow lemon, and a bit of red onion. 

Drizzle the ingredients with some olive oil and season with salt and pepper to taste. 

Place another rectangle of aluminum foil on top of the trout and wrap it, sealing the edges of both rectangles tightly.

Repeat the process with the remaining ingredients.

Place the aluminum foil packets on the hot grill and cook for 7 minutes on each side. Remove from the grill and serve immediately.
